Ingredients
- 3 tbsp oyster sauce
- 1 tsp sugar
- 1 tbsp peanut oil (Vegetable oil may be used instead.)
- 1 bunch Chinese broccoli (gai lan) (Tough ends removed; approximate bunch weight used for nutrition is 300 g.)
- 6 tbsp water (For the oyster sauce mixture.)
- 0.5 tsp sesame oil
- 1 tbsp Chinese cooking wine (Mirin may be used instead.)
- 2 tbsp garlic (Minced.)
- 1 tsp ginger (Minced.)
- salt (A pinch, optional, for the blanching water.)
- oil (A drizzle in the blanching water, optional, to help maintain vibrant color.)
Steps
- 1
Combine the oyster sauce, sugar, Chinese cooking wine or mirin, sesame oil, and water in a small bowl. Mix well and set the sauce mixture aside.
- 2
Bring a large pot of water to a boil. Add a pinch of salt and a drizzle of oil for vibrant color, if desired.
- 3
Add the Chinese broccoli and boil over medium heat for 1 to 2 minutes, until it is cooked through while the stems remain crisp.
- 4
Drain the broccoli, rinse it with cold tap water for a few seconds to stop the cooking, and drain it again.
- 5
Transfer the broccoli to a large plate and spread the pieces out so there is little overlap. If they are very wet, pat the surface dry with paper towels.
- 6
Heat a small skillet or saucepan over medium heat until hot. Add the peanut oil, garlic, and ginger.
- 7
Stir the garlic and ginger a few times until fragrant.
- 8
Reduce the heat to low. Add the oyster sauce mixture and stir immediately.
- 9
Cook the sauce for 10 to 20 seconds, until fragrant, then pour it over the Chinese broccoli.
- 10
Serve immediately as a side dish.
Notes
The source does not specify the exact bunch weight, so nutrition uses an approximate 300 g bunch. The blanching salt and oil are optional and unquantified. Use vegetable oil instead of peanut oil if preferred, and mirin instead of Chinese cooking wine as stated.
