Ingredients
- 2 lb raw peanuts (in-shell)
- 6 star anise (whole pods)
- 1 scoop brown sugar (approximately 1/4 cup)
- 0.25 cup Hawaiian salt (coarse sea salt)
- 1 handful garlic (whole cloves, peeled)
- 2 tbsp Pacific Red Hot sauce (or Hawaiian chili peppers to taste)
- water (enough to fill the pot and cover peanuts)
Steps
- 1
Place the raw in-shell peanuts into a large stockpot or pressure cooker.
- 2
Add 5 to 6 whole star anise pods to the pot.
- 3
Add a scoop (approximately 1/4 cup) of brown sugar.
- 4
Add a quarter cup of Hawaiian salt (coarse sea salt).
- 5
Add a handful of whole garlic cloves. You can dice them if preferred, but whole cloves work well.
- 6
Add the Pacific Red Hot sauce or fresh Hawaiian chili peppers to achieve the desired heat level.
- 7
Fill the pot with water until the peanuts are fully submerged.
- 8
Give the mixture a quick rough mix to distribute the seasonings.
- 9
Place a weight or a smaller lid on top of the peanuts to push them down into the brine, ensuring they stay submerged during cooking.
- 10
Bring to a boil, then reduce heat and simmer until the peanuts are tender. This typically takes 3 or more hours depending on the desired softness. If using a pressure cooker, follow manufacturer settings for legumes (usually 45-60 minutes).
Notes
The author mentions that while you can dice the garlic, using whole cloves is easier and still provides great flavor. Pacific Red Hot sauce is a specific regional favorite mentioned in the comments, but any vinegar-based hot sauce or fresh bird's eye chilies can be substituted.
