Ingredients
- 5 large russet potatoes (Peeled and diced into large chunks)
- salt (For salting the boiling water and seasoning; to taste)
- 0.5 tsp black pepper powder
- 1 tbsp garlic powder (For the hash brown mixture)
- 2 tbsp cornstarch
- 0.25 cup freshly grated Parmesan cheese (Some additional Parmesan is sprinkled on top before serving)
- oil (For greasing hands and deep-frying; amount not specified)
- 0.5 cup mayonnaise (For the sauce)
- 0.25 cup ketchup (For the sauce)
- 1 tbsp Worcestershire sauce (For the sauce)
- 1 tsp garlic powder (For the sauce)
- salt (For the sauce; to taste)
- black pepper (For the sauce; to taste)
- 1 tsp Dijon mustard (For the sauce)
Steps
- 1
Place the peeled, large-chunked russet potatoes in a saucepan and cover them with salted water. Partially boil the potatoes until they are about 50% cooked.
- 2
Drain the potatoes, then leave them in the same saucepan for 10 minutes so the remaining water evaporates.
- 3
Shred the potatoes with a grater and transfer the shreds to a mixing bowl.
- 4
Season the shredded potatoes with salt, the measured black pepper, and the hash brown garlic powder.
- 5
Add the cornstarch and mix it into the seasoned potatoes.
- 6
Add the freshly grated Parmesan cheese and mix until the ingredients are combined.
- 7
Grease your hands with oil, then form the potato mixture into thin oval shapes.
- 8
Lay the formed hash browns flat on a parchment-lined sheet. Freeze them for 15 to 20 minutes, until firm.
- 9
While the hash browns chill, combine the mayonnaise, ketchup, Worcestershire sauce, sauce garlic powder, salt, pepper, and Dijon mustard for the sauce. Mix until combined.
- 10
Heat the frying oil to 350°F (175°C).
- 11
Deep-fry the hash browns over medium heat in batches of 2 to 3 at a time for 4 to 6 minutes, flipping them halfway through.
- 12
Before serving, sprinkle additional Parmesan cheese over the fried hash browns. Serve warm with the sauce.
