Ingredients

  • 1 lb ground beef (80% lean, 20% fat; formed into 2–3 tbsp portions)
  • flaky sea salt (to taste)
  • black pepper (to taste)
  • oil (for cooking)
  • 1 cup yellow onion (thinly sliced)
  • 3.5 jalapeños (source states 3–4; thinly sliced)
  • 0.5 cup mayonnaise (for the sauce)
  • 2 tbsp ketchup (for the sauce)
  • 2 tsp relish (chopped; for the sauce)
  • 2 tsp pickle juice (for the sauce)
  • 2 tbsp yellow onion (diced; for the sauce)
  • 1 tbsp Dijon mustard (for the sauce)
  • 1 tbsp garlic powder (for the sauce)
  • 1 tsp black pepper powder (for the sauce)
  • 1 tbsp smoked paprika powder (for the sauce)
  • salt (to taste; for the sauce)
  • 1 tsp Worcestershire sauce (for the sauce)
  • 10 mini flour tortillas (for assembly)
  • 0.5 cup tomato (seeded and chopped; for assembly)
  • 0.5 cup lettuce (chopped; for assembly)
  • 10 slices cheddar cheese (for assembly)

Steps

  1. 1

Lay the 10 mini flour tortillas flat on a work surface. Divide the ground beef into portions of 2–3 tablespoons each and place one portion on each tortilla.

  2. 2

Press each portion of beef over its tortilla to create an even, thin layer.

  3. 3

Top the beef on each tortilla with the thinly sliced yellow onion and jalapeños. Season with flaky sea salt and black pepper.

  4. 4

Heat oil in a pan over medium heat. When the oil is hot, place the tortillas in the pan with the meat side down.

  5. 5

Cook the tacos for 3–5 minutes, pressing them down as they cook, until the beef is cooked through.

  6. 6

Flip the tacos and cook the tortilla side until it is crispy and golden.

  7. 7

Place a cheddar cheese slice on the meat side of each taco and let the cheese melt.

  8. 8

Make the sauce by combining the mayonnaise, ketchup, chopped relish, pickle juice, diced onion, Dijon mustard, garlic powder, black pepper powder, smoked paprika powder, salt, and Worcestershire sauce. Mix well.

  9. 9

Serve the tacos immediately with the chopped lettuce, seeded chopped tomato, and sauce.

Notes

The source does not specify the amount of cooking oil or the exact cooking vessel size. Cook the beef until cooked through, as stated in the source.
