Creamy layered smoothie combining the freshness of strawberries with the juiciness of tomatoes, skyr, and the sweetness of maple syrup. No cooking is required, and it is served very cold, optionally with ice.

Ingredients

  • 400 g tomatoes (Cut into pieces)
  • 400 g strawberries (For the smoothie)
  • 6 cucchiai maple syrup (Two-thirds for blending with the fruit and tomatoes, the remainder for the skyr; approximately 120 g in total)
  • 170 g skyr
  • strawberries (For garnish)
  • cherry tomatoes (For garnish)

Steps

    Cut the tomatoes into pieces, removing the stems if necessary, and prepare the strawberries. Transfer the tomatoes to the jug of a powerful blender.

    Add the strawberries and two-thirds of the maple syrup, approximately 4 tbsp. Blend until smooth and homogeneous.

    In a bowl, stir the remaining maple syrup into the skyr and mix well until smooth and uniform.

    Pour the skyr and smoothie into 2 dl glasses, alternating them to create clearly visible layers.

    Garnish with strawberries and cherry tomatoes as desired and serve immediately. For an even more refreshing drink, you can blend it with ice cubes.

Notes

The recipe makes 4 glasses of 2 dl each. Fresh strawberries can be replaced with frozen strawberries. Ice is an optional suggestion from the website and is not part of the main ingredient list.
