Ingredients
- 1 pack Instant ramen noodles (veggie ramyun preferred)
- 3 Dumplings (momo or potstickers)
- 1 head Bok choy (small, trimmed)
- 1 cup Ramen cooking water (reserved from boiling noodles)
- 1 tbsp Gochujang
- 1 tbsp Peanut butter (creamy (Pintola brand shown))
- Chili oil (for extra kick)
- 1 packet Ramen seasoning (from the instant ramen pack)
Steps
- 1
Bring a pot of water to a boil.
- 2
Add the ramen noodles, dumplings, and bok choy to the boiling water and cook until the noodles are tender and dumplings are heated through.
- 3
Drain the noodles, dumplings, and bok choy, making sure to reserve about one cup of the cooking water; do not throw it away.
- 4
In a serving bowl, combine the gochujang, peanut butter, and the seasoning packet from the ramen.
- 5
Add the reserved hot cooking water to the bowl and mix well until the peanut butter and gochujang are fully incorporated into a smooth soup base.
- 6
Add the cooked noodles, dumplings, and bok choy into the soup bowl.
- 7
Drizzle with chili oil for an extra kick before serving.
Notes
The author emphasizes reserving the starchy cooking water to create the creamy soup base. Any variety of dumplings or momos can be used.
