Ingredients
- 0.5 cup unsalted butter
- 0.333 cup granulated sugar
- 0.5 cup light brown sugar
- 1 tbsp vanilla bean paste
- 1 large egg (Room temperature)
- 1.25 cup all-purpose flour
- 0.5 tsp baking soda
- salt (Pinch)
- 1.5 cup semi-sweet chocolate chips (Additional chocolate chips for topping, if desired)
Steps
- 1
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- 2
Place the butter in a pan over medium heat and melt it. Continue cooking for 5–7 minutes, until it turns light golden brown and develops a nutty aroma.
- 3
Remove the browned butter from the heat and let it cool completely.
- 4
In a bowl, combine the all-purpose flour, baking soda, and salt. Mix well, then set the dry mixture aside.
- 5
In a separate bowl, combine the cooled browned butter, granulated sugar, and light brown sugar. Mix well.
- 6
Add the vanilla bean paste and room-temperature egg. Mix for 2–3 minutes, until the mixture becomes pale and forms a smooth paste.
- 7
Fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- 8
Add the semi-sweet chocolate chips and mix only until they are just combined throughout the dough.
- 9
Scoop the dough into 4 cookies on the prepared baking sheet, leaving space between them. Top with additional chocolate chips if desired.
- 10
Bake for 12 minutes, or until the edges are golden and crisp while the centers remain gooey.
- 11
Allow the cookies to cool completely before serving.
Notes
The source does not specify a cooling duration. Avoid overmixing after adding the flour so the cookies remain tender.
