Steps
Prepare Chicken
Dice the boneless skinless chicken thighs into small, bite-sized pieces.
Season the chicken heavily on all sides with salt, black pepper, garlic powder, onion powder, paprika, and Italian seasoning.
Heat 1 tablespoon of olive oil in a pan over medium-high heat. Sear the chicken pieces until they are golden brown with crispy edges. Alternatively, air fry the chicken at 390°F (200 °C) (200°C (400 °F)) for 12-15 minutes.
Once the chicken is cooked, finish it with a fresh squeeze of lime juice.
Prepare Dressing
Prepare the Lime Caesar Dressing by adding 3/4 cup plain nonfat Greek yogurt, 2 tablespoons light mayo, the juice of 1 lime, 2 tablespoons grated parmesan, 1 minced garlic clove, 1 anchovy fillet, 1 teaspoon Dijon mustard, a small handful of cilantro, salt, pepper, and a splash of water into a blender.
Blend the dressing ingredients until smooth and creamy.
Build The Bowl
In a large bowl or meal prep containers, combine the 2 cups of cooked jasmine rice and the can of sweet corn.
Top the rice and corn mixture with the crispy chicken thighs.
Drizzle the bowls heavily with the prepared lime Caesar dressing.
Finish the bowls with a garnish of fresh cilantro, chili flakes, black pepper, and an additional squeeze of fresh lime juice.
Notes
This recipe is excellent for high-protein meal prep. The dressing can be made ahead and stored in the fridge. For the best flavor, ensure the chicken is seared until truly crispy.
