Ingredients

  • Saint-Maure de Touraine goat cheese (Carefully remove the straw, then cut the cheese into small pieces)
  • Herb ham (Coarsely sliced)
  • Isigny cream
  • Olive oil
  • Salt (Adjust to taste)
  • Pepper (Adjust to taste)
  • 2 Whole eggs
  • Boiling water (For the bain-marie)
  • Traditional baguette (To serve)

Steps

  1. 1

Prepare the goat cheese: make a shallow cut through the center without cutting the thin straw running through it. Remove one of the two pieces, then carefully remove the straw.

  2. 2

Cut the goat cheese into small pieces and set aside.

  3. 3

    Coarsely slice the herb ham.

  4. 4

Mix the sliced ham with the goat cheese pieces and Isigny cream. Add the olive oil, salt, and pepper to form the mixture.

  5. 5

Place some of the mixture in the bottom of the dish intended for the baked egg, spreading it to cover the base.

  6. 6

Add the two whole eggs on top.

  7. 7

Cover the eggs with the remaining mixture.

  8. 8

Place the dish in a pan containing boiling water to create a bain-marie.

  9. 9

    Bake at 210 °C for 15 minutes.

  10. 10

Serve the baked egg piping hot with a small traditional baguette.
