Ingredients

  • 3 skinless chicken breasts (Use 3 large or 4 small breasts; fully thaw before cooking.)
  • 18 oz Sweet Baby Ray’s Hickory & Brown Sugar Barbecue Sauce (One 18-ounce bottle; a favorite store-bought or homemade barbecue sauce may be used.)
  • 0.333 cup light brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.25 tsp smoked paprika
  • 0.25 tsp chipotle chili powder (Regular chili powder may be substituted.)
  • 0.25 tsp ground white pepper (Ground black pepper may be substituted.)
  • hamburger buns (For serving; butter and toast before serving.)
  • butter (For buttering the hamburger buns before toasting.)

Steps

  1. 1

Place the chicken breasts in the Crock-Pot or slow cooker and turn the heat to low.

  2. 2

In a separate bowl, combine the barbecue sauce, light brown sugar, apple cider vinegar, olive oil, garlic powder, onion powder, smoked paprika, chipotle chili powder, and ground white pepper.

  3. 3

Whisk the sauce mixture until the ingredients are thoroughly combined.

  4. 4

Pour the barbecue sauce mixture into the Crock-Pot over the chicken. Use a spoon to stir and coat all of the chicken with the sauce.

  5. 5

Cover and cook on low for 6–7 hours, or on high for 3–4 hours.

  6. 6

Check the chicken when it is tender and pulls apart easily with a fork; it is ready to shred at this point.

  7. 7

Using two forks, shred the chicken while it is still in the Crock-Pot.

  8. 8

Mix the shredded chicken with the barbecue sauce in the Crock-Pot until it is well coated.

  9. 9

Butter and toast the hamburger buns, then serve the pulled BBQ chicken on the buns.

Notes

For best results, cook on low when possible because high heat is more likely to dry out the chicken. Store cooled chicken in an airtight container in the refrigerator for up to 4 days, or freeze it for later use. The source also suggests serving the chicken with coleslaw, in wraps or tacos, or over baked potatoes.
