Steps
In a large bowl, whisk together the sugar, lemon juice, lemon zest, olive oil, and salt until the sugar has mostly dissolved.
In a separate chilled bowl or using a stand mixer, whip the well-chilled evaporated milk until it is light and foamy and has roughly doubled in volume. Do not whip until stiff peaks form; it should still be pourable.
Gently fold the whipped evaporated milk into the lemon-olive oil mixture until just combined.
Pour the mixture into a shallow, freezer-safe container or a 9-by-13-inch metal baking pan. Cover tightly with plastic wrap and freeze until completely solid, at least 6 to 8 hours or overnight.
Once fully frozen, remove the mixture from the freezer and break it into 2-inch chunks using a knife or spoon.
Place the frozen chunks into a food processor. Pulse and then process until the mixture is smooth and creamy, about 30 to 60 seconds, scraping down the sides as needed.
Transfer the ice cream back to the freezer-safe container and freeze for another 2 hours to firm up to a scoopable consistency before serving.
Notes
Ensure the evaporated milk is very cold before whipping, or it will not aerate. Do not over-whip the milk, as it can cause the base to deflate. The base must be frozen completely solid before the food processor step to prevent separation. Serve with crushed amaretti cookies, shortbread, or a drizzle of olive oil and sea salt.
