Ingredients

  • 0.5 cup unsalted butter (softened; 1 stick)
  • 8 garlic cloves (8–10 cloves)
  • 0.5 cup Parmesan cheese
  • 0.5 cup olive oil (for roasting the garlic)
  • 1 tsp red chili pepper (diced; alternatively, use 1 teaspoon red chili flakes)
  • salt and black pepper (to taste)
  • 0.5 cup fresh mozzarella cheese
  • 1 baguette
  • 0.25 cup fresh parsley (chopped)

Steps

  1. 1

Heat the oven to 400°F (200°C).

  2. 2

Place the garlic cloves and 1/2 cup olive oil in an oven-safe bowl.

  3. 3

Bake the garlic for 30–35 minutes, or until it is soft.

  4. 4

In another bowl, combine the softened butter, baked garlic cloves, diced red chili pepper (or red chili flakes), salt, black pepper, Parmesan cheese, and chopped parsley.

  5. 5

Mix until the garlic mixture is smooth and well combined.

  6. 6

Slice the baguette in half lengthwise.

  7. 7

Spread a generous amount of the garlic mixture onto both cut sides of the baguette.

  8. 8

Top the two baguette halves with the fresh mozzarella cheese.

  9. 9

Bake both halves for about 15–20 minutes, until toasted.

Notes

The source does not specify whether the baguette should be placed cut-side up during the final bake; arrange it so the spread and cheese remain exposed. Salt and pepper quantities are to taste.
