Steps
Generously oil a baking pan with olive oil.
Place your prepared focaccia dough into the pan and give it a simple fold to coat with oil.
Let the dough proof for about two hours, or until it has doubled in size.
Preheat your oven to 400°F (200 °C) (200°C (400 °F)).
With oiled hands, gently dimple the surface of the dough.
Bake the focaccia for approximately 30 minutes until golden brown.
Remove from the oven and let the focaccia cool slightly.
Using a dowel or a clean stick, poke several deep holes across the surface of the warm bread.
Fill a piping bag fitted with a metal tip with strawberry jam and pipe the jam into each hole until filled.
In a small bowl, whisk together the confectioners' sugar, milk, and vanilla bean paste until a smooth, pourable glaze forms.
Drizzle the glaze all over the warm focaccia.
Let the glaze dry and settle until it forms a crackly crust before slicing and serving.
Notes
The author suggests using any jam you prefer, such as grape. The glaze should be applied while the bread is still warm to help it settle correctly.
