Ingredients

  • Ladyfingers (Quantity not specified; needed for the tiramisu layers.)
  • 500 g Mandarins (Peel, blend, and strain; use some of the juice for the curd and the rest to soak the ladyfingers.)
  • 2 Orange zest (Add some to the curd and reserve the rest for garnishing the top.)
  • 200 ml Water
  • 100 g Cornstarch
  • 100 g Sugar
  • 60 g Butter
  • 2 Egg yolks
  • 450 g Mascarpone
  • 200 ml 33–35% cream
  • Vanilla extract (Add a little, to taste.)
  • 2 tbsp Powdered sugar

Steps

  1. 1

Peel the mandarins, blend them, and strain them through a sieve to obtain clear juice without pulp. Use a juicer if desired.

  2. 2

To make the mandarin curd, place the cornstarch and sugar in a saucepan. Add 100 ml of mandarin juice and the water, then whisk until smooth.

  3. 3

Place the saucepan over medium heat. Whisk occasionally and wait for the mixture to thicken.

  4. 4

Remove the thickened mixture from the heat. Add the two egg yolks, butter, and orange zest, then stir.

  5. 5

Cover the mandarin curd and set it aside.

  6. 6

To make the cream, place the mascarpone, cream, and powdered sugar in a bowl. Beat at medium speed until thickened.

  7. 7

Once the cream has thickened, stop beating to avoid overwhipping it. Add a little vanilla extract and stir.

  8. 8

To assemble, dip the ladyfingers in the remaining mandarin juice and arrange them in a dish.

  9. 9

Spread a layer of cream on top, followed by a layer of mandarin curd.

  10. 10

Make another layer of soaked ladyfingers, cream—this time a thin layer—and mandarin curd.

  11. 11

Finish the dessert with the remaining cream: pipe it on with a pastry bag or simply spread it into an even layer.

  12. 12

Sprinkle the top with orange zest.

  13. 13

Refrigerate the tiramisu overnight or for at least 4 hours.

  14. 14

    Serve chilled.

Notes

The author notes that the cream is prepared without eggs this time, but a classic version with eggs can be made if desired. The quantities of ladyfingers and vanilla extract are not specified.
