Ingredients
- 2 eggs
- 1 ripe banana (mashed)
- 3 tbsp flour (the author suggests a protein pancake mix such as Kodiak)
- vanilla extract (a splash)
- 1 tsp baking powder
- pineapple (slices, one per pancake)
- cherries (one per pancake)
- brown sugar (for sprinkling and caramelizing)
Steps
- 1
In a bowl, mix the 2 eggs, the mashed ripe banana, the 3 tbsp of flour, the splash of vanilla, and the 1 tsp of baking powder until the batter is smooth.
- 2
Heat a skillet over medium heat and pour a portion of the batter to form a pancake.
- 3
Immediately add a pineapple slice to the center of the raw batter and place a cherry in the center hole of the pineapple.
- 4
Sprinkle a bit of brown sugar over the pineapple and the cherry.
- 5
Cook until bubbles begin to appear on the surface, then carefully flip the pancake.
- 6
Let it cook on the other side until the sugar melts and the pineapple caramelizes.
- 7
Serve the pancakes hot.
Notes
The author recommends using a protein pancake mix from the Kodiak brand for a better nutritional profile.
