Ingredients
- 1 tbsp Miso paste
- 1 tsp Chili flakes
- 0.333 cup Fresh green onions (Sliced; reserve some for topping.)
- 1 tbsp Sesame seeds
- 4 Garlic (Cloves, minced.)
- 1 tbsp White sugar
- 1 tbsp Fresh ginger (Grated.)
- 1 tbsp Chili crunch or chili paste (Use additional chili crunch for topping if desired.)
- 1 tbsp Soy sauce
- 1 tbsp Rice vinegar
- 0.5 cup Neutral oil (Heat until very hot before pouring over the sauce ingredients.)
- Salt (For the noodle-cooking water, as needed.)
- Pasta water (Reserved as needed; use 2–3 tbsp for a silkier sauce.)
- 2 packets Momofuku Miso Sesame Noodles (Cook according to package instructions, undercooking by about 30 seconds. Include the sauce from the packets if using.)
- Momofuku sauce from the noodle packets (Use if desired; add with the other cold sauce ingredients.)
- Lime wedges (For serving, if desired.)
Steps
- 1
Bring a pot of salted water to a boil. Cook the Momofuku noodles according to the package instructions, undercooking them by about 30 seconds because they will finish in the sauce.
- 2
Reserve some of the noodle-cooking water, then drain the noodles and rinse them under cold water to prevent them from sticking together.
- 3
Place a pan over no heat. Add the miso paste, chili flakes, sliced green onions, sesame seeds, minced garlic, white sugar, grated ginger, chili crunch or paste, rice vinegar, soy sauce, and the sauce from the noodle packets if using.
- 4
Heat the neutral oil until it is very hot. Carefully pour the hot oil over the cold ingredients in the pan, then stir everything together.
- 5
Add the cooked noodles to the pan and toss until they are thoroughly coated in the sauce.
- 6
For a silkier sauce, turn the heat to medium-low, add 2–3 tablespoons of the reserved noodle water, and mix thoroughly.
- 7
Turn off the heat. Top the noodles with additional green onion and chili crunch, and serve with lime wedges if desired.
Notes
The source does not provide the package cooking time for the noodles, so follow the instructions on the noodle packets. The amount of packet sauce is not specified and is listed as optional. Take care when pouring very hot oil into the pan.
