Ingredients

  • 2 oz Pasta (Dry weight; use your choice of shape)
  • 1 Medium Onion (Finely diced)
  • 1 tbsp Minced Garlic
  • 1 tbsp Tomato Paste
  • 1 tbsp Homemade Chili Oil (Adjust to heat preference)
  • Spices (Spices of your choice (e.g., salt, pepper, dried herbs))
  • 0.25 cup Reserved Pasta Water
  • 0.5 cup Unsweetened Whipped Cream (Heavy cream or thickened cream)
  • 1 Cheese Slice
  • 2 tbsp Parmesan Cheese (Grated)

Steps

  1. 1

Boil your pasta in salted water until al dente. Drain, making sure to reserve some of the pasta water for the sauce.

  2. 2

In a pan, sauté the diced medium onion and 1 tablespoon of minced garlic until fragrant.

  3. 3

Stir in the tomato paste and your choice of spices.

  4. 4

Add the homemade chili oil to the pan and mix well with the aromatics.

  5. 5

Pour in the unsweetened whipped cream and a splash of the reserved pasta water to create a silky sauce.

  6. 6

Add the cheese slice and grated Parmesan to the sauce, stirring until melted and smooth.

  7. 7

Toss the cooked pasta into the sauce until every strand is thoroughly coated. Serve immediately.

Notes

The recipe is designed for a single pan to maximize flavor and minimize cleanup. Adjust the amount of chili oil based on your spice tolerance.
