Flourless Chicken and Broccoli Burgers

Ingredients
- 300 g Chicken (Chicken thighs were used, cut into small pieces.)
- 100 g Broccoli (Grated.)
- 60 g Grated cheese
- 2 Eggs (Approximately 100 g of egg without shells.)
- 3 tbsp Extra-virgin olive oil (For cooking in the skillet.)
- Salt (To taste.)
- Black pepper (To taste.)

Cut the chicken into small, uniform pieces. It is not necessary to mince it; the small pieces will help the burgers hold together and cook evenly.

Place the chicken in a bowl. Add the eggs, grated broccoli, grated cheese, salt, and pepper.

Mix all the ingredients until evenly distributed and a moist mixture forms that can be compacted.

Heat the extra-virgin olive oil in a large skillet over medium-low heat. The oil should be hot but not smoking.

Divide the mixture into portions and shape them into compact burgers with your hands. Carefully place them in the hot skillet, leaving space between them.

Cover the skillet and cook the burgers for 5 minutes on the first side, until the base is golden brown and the mixture has set.

Flip the burgers with a spatula. Cover the skillet again and cook for another 4 to 5 minutes, until the chicken is fully cooked and no longer pink in the center.

Remove the burgers from the skillet and serve hot. If desired, serve them with a salad or low-carb vegetables.
