Ingredients

  • 2 frozen potatoes (Thaw for at least 4 hours; use whole frozen potatoes)
  • 1 tbsp cooking oil (For brushing the potatoes)
  • salt (To taste)
  • black pepper (To taste)
  • paprika (For seasoning the potatoes and making the dipping sauce; add to taste)
  • 3 tbsp vegan mayonnaise (For the dipping sauce)
  • 2 tbsp ketchup (For the dipping sauce)

    Soak the frozen potatoes in water to thaw for at least 4 hours, until they become soft.

    Preheat the oven to 200°C. Remove the thawed potatoes and prick the surfaces several times with a fork. Squeeze or gently press them to release excess water.

    Peel the potatoes. Use your hands or a tool to split each potato open from the center and flatten it, working gently so it does not completely crumble.

    Place the flattened potatoes on a baking sheet and brush the surfaces evenly with cooking oil.

    Season the potatoes with salt, black pepper, and paprika.

    Bake in the 200°C oven for about 20 minutes, until the surfaces are crisp, the edges are golden brown, and the insides remain soft.

    Make the dipping sauce: Add the vegan mayonnaise, ketchup, and a small amount of paprika to a small bowl and stir until well combined.

    Serve the potatoes hot with the dipping sauce.

Notes

The potatoes must be thoroughly thawed before handling so they can be pricked, peeled, and flattened easily. The actual baking time will vary depending on the size of the potatoes and the oven's heat; bake until crisp on the outside and soft inside.
