Ingredients

  • 2 cup all-purpose flour
  • 1 tsp kosher salt
  • 1.5 tbsp baking powder
  • 1 tbsp sugar
  • 1.66 cup milk
  • 2 eggs
  • 0.33 cup butter (melted)
  • 1 tsp vanilla extract
  • 0.25 cup all-purpose flour (for sauce)
  • 0.75 cup sugar (for sauce)
  • 2 cup milk (for sauce)
  • 1 tsp vanilla extract (for sauce)
  • 2 tbsp butter (for sauce)
  • 0.25 tsp ground nutmeg (grated or sprinkled over top)

Steps

    Combine the 2 cups flour, salt, baking powder, and 1 tablespoon sugar in a large mixing bowl.

    Add the 1 2/3 cups milk and the 2 eggs to the bowl.

    Whisk the mixture to combine.

    Pour the 1/3 cup melted butter and 1 teaspoon vanilla into the batter and stir until mostly smooth, taking care not to over-stir.

    Let the batter rest for at least 10-15 minutes while heating the waffle iron.

    Heat the waffle iron according to the manufacturer's directions.

    Pour batter onto the hot waffle iron and cook until crisp and golden.

    In a small saucepan, whisk together the 1/4 cup flour and 3/4 cup sugar for the sauce.

    Add the 2 cups milk and set the stove heat to medium.

    Whisk until smooth and continue stirring or whisking frequently as it cooks.

    Continue cooking until the sauce begins to bubble and has thickened.

    Remove the pan from the heat, add the 2 tablespoons butter and 1 teaspoon vanilla, and stir to combine.

    Pour the warm sauce over hot waffles and grate or sprinkle nutmeg over the top before serving.

Notes

Serve warm or let cool completely before storing. The batter rest is essential for the fluffiest texture. The sauce is a family tradition from the author's grandmother.
