Ingredients
- 1 lb skinless, boneless chicken breasts (Cut into 1-inch cubes.)
- 1 tbsp olive oil
- 1 tsp salt (Use less if using the optional instant chicken stock.)
- 2 tbsp unsalted butter (Diced.)
- 0.25 tsp freshly ground black pepper
- 0.5 tsp paprika
- 0.125 tsp cayenne pepper
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 1 tsp instant chicken stock (Optional; reduce the salt if using.)
- 1 tsp Italian seasoning
- fresh parsley (Chopped, for garnish.)
Steps
- 1
Preheat the oven to 420°F (220°C).
- 2
Cut the chicken breasts into regular 1-inch cubes so they cook evenly.
- 3
Combine the salt, freshly ground pepper, paprika, cayenne pepper, garlic powder, onion powder, instant chicken stock if using, and Italian seasoning in a small bowl.
- 4
Arrange the cubed chicken in a baking dish.
- 5
Drizzle the olive oil over the chicken, sprinkle with the seasoning mixture, and toss until the pieces are evenly coated.
- 6
Dot the seasoned chicken with the diced butter.
- 7
Bake for 15–18 minutes, stirring after 8–10 minutes for even cooking, until the chicken reaches an internal temperature of 165°F (75°C).
- 8
For crispier edges, broil on high for the final 1–2 minutes.
- 9
Sprinkle with chopped parsley and let the chicken rest for 5 minutes before serving.
Notes
For easier, less messy cutting, the chicken may be frozen for 45 minutes first, although this is optional. For extra-crispy chicken, add 1 tablespoon cornstarch to the seasoning mixture; this is an optional variation and is not included in the ingredient quantities above. Leftovers can be stored in an airtight container for 2 days in the refrigerator or 2 months in the freezer. Reheat gently in the microwave, oven, or skillet, adding a small splash of water or broth if needed.
