Ingredients
- Dambo cheese, very thinly sliced (As needed to cover the entire pan; place the slices slightly overlapping.)
- 2 Hard-boiled eggs
- 1 tbsp Cream cheese (A generous amount.)
- 1 Small tomato (Cut into very small pieces.)
- Salt (To taste.)
- Pepper (To taste.)
Steps
- 1
Cover the entire base of a nonstick pan with the Dambo cheese slices, making sure they slightly overlap.
- 2
Cook the cheese over low to medium heat until it melts and begins to brown.
- 3
Remove the pan from the heat and let the cheese base cool before removing it from the pan. This cooling step is important so it firms up and comes out in one piece.
- 4
To prepare the filling, mash the hard-boiled eggs together with the cream cheese.
- 5
Add the finely chopped tomato. Season with salt and pepper to taste, and mix until a paste forms.
- 6
Place the filling on the cheese base. Roll or fold the pancake and serve.
Notes
The recipe does not specify the amount of Dambo cheese because enough should be used to cover the pan. It is naturally gluten-free; if preparing it for someone with celiac disease, verify that all ingredients are labeled gluten-free and avoid cross-contamination. The recipe calls for hard-boiled eggs but does not include instructions for boiling them.
