Ingredients
- 330 g ripe bananas (peeled and mashed)
- 8 tbsp unsalted butter (melted, then browned)
- 1 egg (room temperature)
- 0.333 cup granulated sugar
- 0.5 cup light brown sugar
- 1 tbsp vanilla bean paste
- 0.333 cup sour cream or Greek yogurt (use sour cream or Greek yogurt)
- 190 g all-purpose flour
- 1 tsp baking soda
- salt (a pinch)
- 1 cup semisweet chocolate chips (plus more for sprinkling on top, if desired)
Steps
- 1
Place the butter in a light-colored saucepan over medium heat. Melt it completely; it will foam and bubble, so stir constantly.
- 2
Continue cooking and stirring until the butter turns deep golden amber and smells nutty. Remove it from the heat immediately.
- 3
Pour the browned butter into a bowl, scraping all of the browned bits from the saucepan into the bowl. Let it cool for 5–10 minutes before using.
- 4
Preheat the oven to 350°F. Line a 9 × 5-inch loaf pan with parchment paper.
- 5
In a large mixing bowl, add the mashed bananas and cooled browned butter. Whisk thoroughly.
- 6
Add the light brown sugar and granulated sugar, and mix for 1–2 minutes until well combined.
- 7
Crack in the room-temperature egg and whisk until combined.
- 8
Add the sour cream or Greek yogurt and the vanilla bean paste. Mix for 1–2 minutes until everything is well combined.
- 9
In a separate bowl, combine the all-purpose flour, salt, and baking soda.
- 10
Gradually add the dry ingredients to the wet batter. Add the chocolate chips and mix only until just combined; do not overmix.
- 11
Pour the batter into the prepared loaf pan. Sprinkle additional chocolate chips over the top if desired.
- 12
Bake for 55–60 minutes, or until a toothpick inserted into the loaf comes out clean.
- 13
Let the banana bread cool completely before cutting and serving.
Notes
The source specifies a 9 × 5-inch loaf pan and gives a bake time of 55–60 minutes, but does not state an internal temperature. The additional chocolate chips for topping are optional and unquantified.
