Slow Cooker Creamy Pork Chops and Potatoes

Ingredients
- 4 pork chops (bone-in or boneless)
- 1.5 lb baby potatoes (or sliced potatoes)
- 2 tbsp olive oil
- 2 tbsp butter
- 1 onion (small, chopped)
- 3 garlic cloves (minced)
- 1 cup chicken broth
- 10.5 oz cream of mushroom soup (1 can; or cream of chicken soup)
- 0.5 cup heavy cream (or sour cream)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 0.5 tsp black pepper
- salt (to taste)
- 1 tsp Italian seasoning (or dried parsley)
- 1 tbsp cornstarch
- 2 tbsp water (cold)
- fresh parsley (for garnish, optional)
Steps

Season the pork chops evenly with salt, black pepper, paprika, garlic powder, and onion powder.

Heat 2 tablespoons of olive oil in a skillet over medium-high heat.

Sear the seasoned pork chops for 2–3 minutes on each side until golden brown, then remove from heat.

Place the baby potatoes (or sliced potatoes) in the bottom of the slow cooker.

Add the chopped onion and minced garlic over the potatoes.

Place the seared pork chops on top of the potatoes and aromatics.

In a separate bowl, whisk together the chicken broth, cream of mushroom soup, heavy cream, Italian seasoning, and 2 tablespoons of butter.

Pour the sauce mixture over the pork chops and potatoes in the slow cooker.

Cover the slow cooker and cook on low for 5–6 hours or on high for 2.5–3.5 hours, until the pork chops are tender and the potatoes are soft.

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry.

Stir the cornstarch slurry into the sauce in the slow cooker.

Cover again and cook for an additional 10–15 minutes until the sauce has thickened.

Sprinkle with fresh parsley before serving.
Notes
Serve hot with green beans, salad, rice, or warm bread. You can substitute cream of chicken soup for cream of mushroom if preferred, and sour cream can be used in place of heavy cream for a tangier sauce.
