Ingredients
- 400 g Ground beef
- 400 g Fresh udon noodles
- 3 EL Peanut butter
- 2 EL Soy sauce (Divide between deglazing the ground beef and the sauce.)
- 1 TL Sugar
- 3 Zehen Garlic (Finely chopped.)
- 2 EL Sesame oil (Divide between frying the ground beef and the sauce.)
- 150 ml Water (Hot noodle water; add to the sauce gradually.)
- 2 Carrots (Grated.)
- Sesame seeds (For sprinkling; quantity not specified.)
- Cilantro (Roughly chopped; for serving. Alternatively, use scallions.)
- 1 Lime (Cut into pieces and squeeze over the dish when serving.)
- Scallions (Optional alternative to cilantro; quantity not specified.)
- Crispy chili oil (Optional for serving; quantity not specified.)
Steps
- 1
Chop the garlic. Grate the carrots and roughly chop the cilantro. Set out the sesame seeds. Cut the lime into pieces so that as much juice as possible can be squeezed out later.
- 2
Cook the udon noodles according to the package instructions (in the video: 2–3 minutes). Before draining, reserve about 150 ml of the noodle water and set aside.
- 3
Heat a large skillet over high heat. Test it with a drop of water: if the drop dances around the skillet, it is hot enough.
- 4
Add the sesame oil to the skillet. Add the ground beef and break it up.
- 5
Let the ground beef cook undisturbed for 4 minutes so it can brown. Then stir and continue cooking until evenly browned.
- 6
Add the chopped garlic to the ground beef and cook for about 30 seconds, until fragrant.
- 7
Deglaze with the soy sauce, remove the ground beef from the skillet, and set aside.
- 8
In the same skillet, whisk the peanut butter with the hot water until a creamy sauce forms.
- 9
Stir the remaining sesame oil, the remaining soy sauce, and the sugar into the sauce.
- 10
Add the cooked udon noodles to the sauce and toss to combine.
- 11
Gradually stir in the noodle water until the sauce reaches the desired consistency.
- 12
Divide the udon among bowls and top with the ground beef. Garnish with grated carrots, cilantro or, alternatively, scallions, and sesame seeds. Add the lime pieces and, if desired, crispy chili oil. Squeeze the lime over the dish and toss everything together before eating.
Notes
The soy sauce and sesame oil are each used in two steps. According to the source, cilantro can be replaced with scallions; crispy chili oil is optional. Add the specified amount of noodle water gradually; some may remain.
