Ingredients
- 100 g vermicelli noodles
- 2 tbsp extra virgin olive oil
- 1 leek (Finely diced)
- 1 carrot (Finely diced)
- 2 celery stalks (Finely diced)
- 2 garlic cloves (Peeled and crushed)
- 0.25 bunch parsley (Finely chop the stalks and pick the leaves; reserve the leaves for serving)
- 1 tsp ground turmeric
- 5 cup salt-reduced chicken stock
- 400 g chicken breasts (Free-range where possible)
- 0.5 head broccoli (Florets finely chopped)
- sea salt and black pepper (To taste)
- 1 lemon (Cut into wedges for serving)
- chili oil (Optional; drizzle over the soup when serving, as suggested in the video)
Steps
- 1
Prepare the vermicelli noodles according to the packet instructions. Drain if necessary and set aside.
- 2
Heat the extra virgin olive oil in a large saucepan over medium-high heat.
- 3
Add the diced leek, carrot, celery, crushed garlic, chopped parsley stalks, and ground turmeric. Sauté for 5–6 minutes, or until the vegetables begin to soften.
- 4
Pour the chicken stock into the saucepan and bring it to a boil.
- 5
Once the stock is boiling, carefully place the chicken breasts into the saucepan. Cover with a lid, reduce the heat to a simmer, and cook for 10–15 minutes, or until the chicken is just cooked through.
- 6
Use tongs to remove the cooked chicken from the stock. Allow it to cool slightly.
- 7
Shred the chicken using a knife and fork.
- 8
Return the shredded chicken to the saucepan. Add the prepared vermicelli noodles and chopped broccoli florets.
- 9
Season the soup to taste with sea salt and black pepper. Cook for an additional 2–3 minutes, until the broccoli is cooked to your preference and the soup is hot.
- 10
Divide the soup among 3 bowls. Top with the reserved parsley leaves and lemon wedges. Drizzle with chili oil if desired.
Notes
Double the batch and freeze half for an easy future meal. Leftovers can be refrigerated for up to 3 days or frozen for up to 1 month. The source does not specify a reheating method.
