Ingredients

  • 2 large russet potatoes
  • oil for frying (Use enough oil for frying in batches.)
  • 3 tbsp all-purpose flour
  • 2 tbsp corn flour
  • salt (To taste; used in the boiling water and as seasoning.)
  • 2 tbsp vinegar
  • 4 tbsp butter (For the garlic Parmesan chili butter.)
  • garlic (Quantity not specified; used in the garlic Parmesan chili butter.)
  • 2 Thai chilis (Sliced.)
  • 0.5 cup Parmesan cheese (Freshly grated for garnish.)
  • parsley (Chopped; garnish.)
  • 0.5 cup mayonnaise (For the spicy sauce.)
  • 2 tbsp jalapeños (Chopped.)
  • 1 tbsp Sambal oelek sauce (Alternatively, use any chili sauce plus 1/2 tbsp red chili flakes.)
  • 1 tbsp fresh garlic (Finely minced; for the spicy sauce.)
  • 1 tbsp black pepper
  • 1 tbsp lemon juice
  • salt (To taste; for the spicy sauce.)

Steps

  1. 1

Wash the potatoes. Using a potato crinkle cutter, slice downward into one end of a potato, rotate it 90 degrees, and slice downward again. Continue alternating the direction of the crinkle cuts until the potato is cut into waffle fries.

  2. 2

Bring a pot of water to a boil. Add salt and the vinegar.

  3. 3

Add the waffle-cut potatoes to the boiling water and boil for 3 minutes.

  4. 4

Drain the potatoes and pat them dry.

  5. 5

In a bowl, mix the all-purpose flour and corn flour.

  6. 6

Coat the dried potatoes evenly with the flour mixture.

  7. 7

Heat frying oil. Add the waffle fries in batches and cook over medium-high heat for 3–4 minutes per batch, until light golden and crispy.

  8. 8

Remove the fries and drain them on a cooling rack. Sprinkle with seasoning and salt to taste.

  9. 9

For the garlic Parmesan chili butter, melt the butter in a pan over medium heat for 1 minute.

  10. 10

Once the butter has melted, add the garlic and sliced Thai chilis. Sauté over medium heat for 1 minute.

  11. 11

Pour the garlic-chili butter over the fries. Garnish with freshly grated Parmesan cheese and chopped parsley.

  12. 12

For the spicy sauce, combine the mayonnaise, chopped jalapeños, Sambal oelek, finely minced garlic, salt, black pepper, and lemon juice in a mixing bowl. Mix until combined.

  13. 13

Serve the fries with the spicy sauce and enjoy.

Notes

The quantity of garlic for the garlic Parmesan chili butter and the amount of frying oil are not specified in the source. The source mentions sprinkling the fries with seasoning but does not define a separate seasoning blend; salt is listed and may be used to taste.
