Caramelized Onion, Gouda, and Pear Sandwich

Ingredients
- 2 large white onions (sliced into thin feathers)
- 60 g unsalted butter
- olive oil (amount needed for the pan)
- salt (to taste)
- pepper (to taste)
- 80 g Gouda cheese
- 1 pear (thinly sliced)
- 2 bread (slices of loaf bread or your choice)

Slice the white onions into thin feathers.

In a skillet, add the butter and a splash of olive oil.

When the butter melts and is bubbling, add the onion and a pinch of salt.

Place over medium heat to begin the caramelization process.

Caramelize the onion for approximately 1.5 hours. Stir frequently (about every 10 minutes) and alternate the temperature between medium and low heat as necessary to prevent burning. The onion should acquire a deep brown color and a very soft texture.

In the same skillet where the onions were caramelized, assemble the sandwich: first place a slice of bread, then a generous layer of caramelized onion, followed by the thinly sliced pear, and finally the Gouda cheese.

Close the sandwich with the other slice of bread.

Cook over medium heat and brown the bread on both sides until the cheese has melted and the bread is crispy.
Notes
Caramelization time depends on the amount of onion and the thickness of the cut. Patience is key to obtaining the natural sweet flavor of the onion without adding sugar.
