- 1 egg
- 1 tsp vanilla extract
- 110 g all-purpose flour (for the matcha dough; range 100-120g depending on humidity)
- 0.5 tbsp matcha powder
- 0.25 tsp baking soda (for the matcha dough)
- 0.25 tsp baking powder (for the matcha dough)
- salt (pinch for the matcha dough)
- 63 g white chocolate chips
- 110 g all-purpose flour (for the Earl Grey dough; range 100-120g depending on humidity)
- 1.5 teabags Earl Grey tea (leaves only, removed from bags)
- 0.25 tsp baking soda (for the Earl Grey dough)
- 0.25 tsp baking powder (for the Earl Grey dough)
- salt (pinch for the Earl Grey dough)
- 63 g gold or caramel chocolate chips
Steps
- 1
In a large mixing bowl, whisk together 110g of softened or melted butter, 105g of sugar, 1 egg, and 1 tsp of vanilla until well combined.
- 2
Separate this wet mixture evenly into two separate bowls.
- 3
In a small bowl, prepare the dry ingredients for the matcha dough by mixing together 100-120g of flour (start with 110g), 1/2 tbsp of matcha powder, 1/4 tsp baking soda, 1/4 tsp baking powder, and a pinch of salt.
- 4
Add the matcha dry mixture into one of the bowls containing the butter mixture.
- 5
Add 63g of white chocolate chips to the matcha bowl.
- 6
In a second small bowl, prepare the dry ingredients for the Earl Grey dough by mixing together 100-120g of flour (start with 110g), the contents of 1.5 Earl Grey teabags, 1/4 tsp baking soda, 1/4 tsp baking powder, and a pinch of salt.
- 7
Add this Earl Grey dry mixture into the second bowl containing the butter mixture.
- 8
Add 63g of gold or caramel chocolate chips to the Earl Grey bowl.
- 9
Mix both cookie doughs separately until no streaks of flour remain. If the dough is too wet, add a little more flour as needed.
- 10
Piece the two doughs together randomly to create a marbled effect and form them into 6 large balls, approximately 90g each.
- 11
Place the dough balls on a tray and freeze for a couple of hours.
- 12
Preheat your oven to 160°C (320°F). Bake the frozen cookies for 15-20 minutes until the edges are set.
Notes
The amount of flour needed may vary between 100g and 120g per dough section depending on the humidity, temperature, and specific brand of flour used. Adjust the quantity until the dough is no longer sticky but not overly dry.
