Ingredients

  • 2 portions Noodles
  • Bean sprouts (Quantity unspecified)
  • 200 g Ground pork
  • Minced garlic (Use in the pork, the sauce, and as a garnish; amount to taste)
  • Finely chopped onion (Quantity unspecified)
  • Scallion (Finely sliced; quantity unspecified)
  • 1 tbsp Soy sauce (For seasoning the pork)
  • 1 tsp Dark soy sauce (For seasoning the pork)
  • 0.5 tbsp Oyster sauce (For seasoning the pork)
  • 1 tsp Sugar (For seasoning the pork)
  • 2 tsp Sugar (For the sauce in the bowl)
  • 2 tbsp Soy sauce (For the sauce in the bowl)
  • 3 tbsp Chinese black rice vinegar (For the sauce in the bowl)
  • Oil (A drizzle for cooking the pork, then a little more to pour very hot over the scallion and garlic; quantity unspecified)

Steps

  1. 1

Cook the noodles according to the time indicated on the package.

  2. 2

Fifteen seconds before the end of the cooking time, add the bean sprouts directly to the water with the noodles. Then drain everything.

  3. 3

Meanwhile, heat a skillet and add a drizzle of oil.

  4. 4

Sauté the chopped onion and minced garlic in the hot oil.

  5. 5

Add the ground pork and sear it before seasoning.

  6. 6

Add the soy sauce, dark soy sauce, oyster sauce, and sugar intended for the pork.

  7. 7

Mix while carefully breaking up the pork to obtain small pieces well coated in the sauce. Taste and adjust the seasoning if necessary.

  8. 8

Finely slice the scallion and set it aside.

  9. 9

In each serving bowl, mix the sugar, soy sauce, black rice vinegar, and a little minced garlic directly to form the sauce.

  10. 10

Add the drained noodles and bean sprouts to the bowls, then generously spoon the pork over the top.

  11. 11

Finish with the sliced scallion and, to taste, a little more minced garlic.

  12. 12

Heat a little oil until very hot, then pour it directly over the scallion and garlic. Be careful of splattering: the heat of the oil immediately releases the aromas.

  13. 13

Carefully mix the noodles with the sauce before serving.

Notes

The amounts of garlic, onion, scallion, bean sprouts, and oil are not specified in the source. The noodle cooking time depends on the time indicated on the package. Pour the oil carefully because it may splatter.
