Ingredients
- 4 chicken thighs (skin-on, bone-in)
- 2 tbsp olive oil (for roasting chicken and croutons)
- salt (to taste)
- black pepper (to taste)
- 2 slices sourdough bread (torn into chunks for croutons)
- 1 head romaine lettuce (chopped)
- 50 g parmesan cheese (finely grated for dressing and garnish)
- 3 tbsp mayonnaise (for the dressing)
- 1 tsp dijon mustard (for the dressing)
- 0.5 lemon juice (squeezed for the dressing)
- 1 clove garlic (minced for the dressing)
- 2 anchovies (finely chopped (optional, for dressing))
Steps
- 1
Preheat your oven to 200°C (400°F). Place the chicken thighs in a roasting tin, drizzle with olive oil, and season generously with salt and black pepper.
- 2
Roast the chicken in the oven for approximately 25-30 minutes, or until the skin is crispy and the meat is cooked through.
- 3
While the chicken roasts, tear the sourdough bread into bite-sized chunks. Place them on a separate baking tray, toss with a little olive oil and salt, and roast for the final 10-12 minutes of the chicken's cooking time until golden and crunchy.
- 4
Prepare the dressing by whisking together the mayonnaise, grated parmesan, dijon mustard, lemon juice, minced garlic, and finely chopped anchovies (if using) in a small bowl. Adjust seasoning to taste.
- 5
Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Shred or slice the chicken into large pieces, discarding the bones if preferred.
- 6
In a large salad bowl, combine the chopped romaine lettuce and the roasted sourdough croutons.
- 7
Add the chicken pieces to the bowl and pour over the parmesan dressing. Toss everything together until well coated.
- 8
Serve immediately, topped with extra shavings of parmesan cheese if desired.
Notes
Inspired by Julius Roberts' Caesar salad. The author mentions the full written recipe is available in his newsletter. The chicken is roasted until very juicy and the skin is crisp.
