Ingredients
- 1 kg Starchy potatoes (Memphis variety used; peeled and cut into large chunks)
- 6.75 tbsp Cornstarch (Source gives a range of 6½–7 tbsp)
- 1.5 tsp Garlic powder
- 1 tsp Paprika
- 0.667 tsp Black pepper
- 1.25 tsp Salt (Additional salt is used in the potato boiling water; amount not stated)
- 3 tbsp Fresh parsley (Finely chopped)
- 6.3 oz Mozzarella (Source gives a range of 6.3–7 oz (180–200 g); cut into cubes)
- Oil (For frying; use enough in a skillet to come at least halfway up the croquettes)
Steps
- 1
Peel the potatoes and cut them into large chunks.
- 2
Put the potato chunks in a pot of salted water and boil until completely tender. The quantity of salt for the water is not specified.
- 3
Drain the potatoes well, then mash until smooth and dry. Do not add milk or butter.
- 4
Let the mashed potatoes cool slightly.
- 5
Add the cornstarch, garlic powder, paprika, black pepper, measured salt, and finely chopped parsley. Mix until the potato mixture is soft and pliable.
- 6
Take a portion of the mixture about the size of a small clementine and flatten it. Place a cube of mozzarella in the center, then seal the potato mixture around the cheese. Shape as desired and repeat with the remaining mixture and cheese to make about 14 croquettes.
- 7
Optional: Freeze the shaped croquettes for 15–20 minutes before frying to help them hold their shape.
- 8
Pour enough oil into a skillet to come at least halfway up the croquettes, then heat it over medium heat.
- 9
Fry the croquettes over medium heat for 2–3 minutes per side, turning as needed, until evenly golden.
- 10
Transfer the fried croquettes to a paper towel-lined plate to remove excess oil. Serve hot.
Notes
The post does not specify the amount of salt for the boiling water or the amount of frying oil. Cornstarch and mozzarella quantities are given as ranges; the quantities here use their midpoints. Freezing before frying is optional.
