Ingredients
- 6 tortillas
- 1 tbsp plain flour (For sealing the tortilla cups)
- 3 tbsp water (For the flour mixture)
- 500 g chicken mince
- 1 sachet Mingle taco seasoning
- 1 tbsp tomato paste
- 100 ml chicken stock
- 1 red capsicum (Thinly sliced)
- 0.5 cup mozzarella (For topping)
- 1 tbsp coriander (Chopped; for finishing)
- oil or cooking spray (For greasing the baking dish)
Steps
- 1
Preheat the oven to 180°C.
- 2
In a small bowl, mix the plain flour and water until the mixture is smooth.
- 3
Make four cuts around each tortilla. Lightly brush the cut edges with the flour mixture, then fold and press the tortillas into cup shapes so the edges are secured.
- 4
Place the tortilla cups into a greased baking dish.
- 5
Heat a large pan over high heat. Add the chicken mince and cook until browned.
- 6
Add the taco seasoning and tomato paste to the browned chicken. Stir well to combine.
- 7
Pour in the chicken stock.
- 8
Add the thinly sliced red capsicum. Cook the mixture until it has thickened and the liquid has been absorbed.
- 9
Spoon the chicken mixture into the tortilla cups.
- 10
Top the filled cups with the mozzarella.
- 11
Bake for 10–15 minutes, until the cheese is melted and the tortilla edges are crisp.
- 12
Finish with the chopped coriander.
Notes
The source does not specify the weight of the taco seasoning sachet or the exact cooking time needed to reduce the filling; cook until the liquid has visibly absorbed and the filling is thick.
