Ingredients
- 2 sticks celery (trimmed and small diced)
- 14.5 oz diced tomatoes
- fresh basil (1 small package; leaves picked from stems and minced)
- 4 cloves garlic (peeled and minced)
- 0.5 lb ground turkey
- 10 oz spaghetti pasta
- 2 cans tomato sauce
- 1 medium yellow onion (peeled and small diced)
- black pepper (to taste)
- crushed red pepper (to taste)
- extra virgin olive oil (as needed to coat the pan)
- salt (for the pasta water and sauce, to taste)
Steps
- 1
Fill a medium saucepan about halfway with water, cover it, and bring the water to a boil.
- 2
Wash and dry the fresh produce.
- 3
Trim and discard the ends of the celery. Small-dice the celery and transfer it to a medium bowl.
- 4
Peel and small-dice the onion, then add it to the bowl with the celery.
- 5
Preheat a sauté pan over medium heat.
- 6
Peel and mince the garlic, then transfer it to a small bowl.
- 7
Add enough olive oil to the sauté pan to swirl and coat the bottom.
- 8
Add the celery and onion to the pan. Cook, stirring occasionally, for 2 to 4 minutes, until the vegetables begin to soften.
- 9
While the vegetables cook, pick the basil leaves from the stems. Discard the stems and mince the leaves.
- 10
Add the garlic to the pan and cook for 15 to 30 seconds, until fragrant.
- 11
Once the water is boiling, season it with salt and add the spaghetti. Cook for 8 to 10 minutes, or until the pasta reaches your desired firmness.
- 12
Drain the cooked spaghetti in a colander.
- 13
Add the ground turkey to the sauté pan. Cook for 2 to 4 minutes, breaking it apart with a spoon, until browned and crumbly.
- 14
Add the diced tomatoes and tomato sauce to the pan. Season with salt, black pepper, and crushed red pepper.
- 15
Increase the heat to medium-high and simmer the sauce for 4 to 6 minutes, until thickened.
- 16
Stir the minced basil and drained spaghetti into the sauce until combined.
- 17
Divide the pasta among bowls and serve.
