Weights are estimates. Together, the ingredients weigh about 1.52 kg before cooking, which is about 190 g per serving.

Steps

  1. Finely chop or mince the cabbage, onion, carrot, and bell pepper. Place the prepared vegetables in a large bowl.

  2. In a separate bowl, whisk together the mayonnaise, sweet pickle juice, white vinegar, sugar, black pepper, and salt until the dressing is smooth.

  3. Stir the minced dill pickles or pickle relish into the dressing.

  4. Pour the dressing over the vegetables and toss thoroughly until everything is evenly coated.

  5. Cover the bowl and refrigerate for at least 1–2 hours so the flavors have time to blend.

  6. Stir the coleslaw again just before serving.

Notes

The source gives a refrigeration range of at least 1–2 hours before serving. Choose either minced dill pickles or pickle relish.
