Ingredients
- 2 cup all-purpose flour
- 1 pack instant yeast
- 2 tbsp Greek yogurt
- 0.5 cup warm water
- 1 tbsp salt (For the dough)
- 0.5 tbsp sugar (For the dough)
- 4 large potatoes (Boiled)
- 0.5 cup green onions (Sliced)
- salt (To taste; for the potato filling)
- 1 tbsp red chili flakes
- 1 tbsp black pepper
- 1 tsp cumin seeds
- 1 cup mozzarella cheese (For the filling)
- sesame seeds (For garnish)
- coriander (Freshly chopped; for garnish)
- milk or egg (For brushing the dough edges)
Steps
- 1
In a large bowl, add the all-purpose flour, the dough salt, Greek yogurt, and sugar.
- 2
In a cup, mix the warm water and instant yeast. Let the mixture sit for 5 minutes.
- 3
Knead the flour mixture with the yeast-and-water mixture until you have a smooth ball of dough. Add a small amount of flour if the dough is too sticky.
- 4
Leave the dough to rest for at least 1 hour.
- 5
Place the boiled potatoes in a bowl and mash them.
- 6
Add the sliced green onions, filling salt, red chili flakes, black pepper, and cumin seeds to the mashed potatoes. Mix until well combined.
- 7
Divide the dough into ball shapes.
- 8
Flatten each dough ball and add some of the potato mixture.
- 9
Top the potato filling with mozzarella cheese.
- 10
Brush the sides of the dough with milk or egg.
- 11
Sprinkle sesame seeds over the dough and garnish with freshly chopped coriander leaves.
- 12
Bake at 400°F for 18–20 minutes, until the dough is fully cooked and the cheese is melted and golden.
Notes
The source does not specify how many flatbreads the dough makes, how much filling to use per flatbread, or whether milk or egg is preferred for brushing. It also assumes the potatoes are already boiled and does not provide a boiling method or time.
