Ingredients

  • 0.5 cup Almonds (Roughly chopped)
  • 10 Medjool dates (Pitted)
  • Salt (A pinch)
  • 1 tbsp Neutral oil (Vegetable, avocado, or coconut oil)
  • 2 tbsp Cocoa powder
  • 1 tbsp Peanut butter (Optional)
  • Shredded coconut (For topping; amount not specified)
  • Pistachios (For topping; amount not specified)
  • Melted chocolate (Optional, for dipping; amount not specified)

Steps

  1. 1

Place the roughly chopped almonds in a food processor and pulse until chopped.

  2. 2

Add the pitted Medjool dates, a pinch of salt, neutral oil, cocoa powder, and optional peanut butter to the food processor.

  3. 3

Blend until the mixture is well combined. If it sticks to the sides of the food processor, stop and use a spatula to mix it back toward the blades, then continue blending.

  4. 4

Shape the mixture into round balls.

  5. 5

Top the date balls with shredded coconut and pistachios. Alternatively, dip them in melted chocolate; the author served them without chocolate or extra sugar.

Notes

The source does not specify the amounts of shredded coconut, pistachios, or optional melted chocolate. No cooking or chilling time is provided.
