Ingredients
- 0.5 cup roasted almonds or peanuts (optional)
- 1 tsp vegetable oil
- 0.5 cup light corn syrup
- 0.75 cup light brown sugar (packed)
- 0.25 cup water
- 0.5 tsp salt
- 0.25 tsp vanilla extract
- 1 bag 94% fat-free microwave popcorn (popped)
Steps
- 1
Pop the bag of 94% fat-free microwave popcorn according to the package directions. Remove any unpopped kernels and place the popped corn into a large bowl.
- 2
If using, add the roasted almonds or peanuts to the bowl with the popcorn.
- 3
In a medium saucepan, combine the vegetable oil, light corn syrup, light brown sugar, water, and salt.
- 4
Bring the mixture to a boil over medium heat, stirring constantly. Continue to cook until the mixture reaches the soft-ball stage (approximately 235°F / 113°C).
- 5
Remove the syrup from the heat and stir in the vanilla extract.
- 6
Pour the hot candy mixture over the popcorn and nuts, tossing gently to coat evenly.
- 7
Spread the coated popcorn onto a baking sheet or large microwave-safe dish. Microwave on high in short intervals, stirring in between, to help the coating set and become crunchy as described by the author.
- 8
Allow the Fiddle Faddle to cool completely before serving to ensure the coating hardens.
Notes
The author notes that while there is a small amount of fat in the recipe, it calculates to less than 1 gram of fat per 1-cup serving. Using a high-quality low-fat microwave popcorn is key to the texture.
