Ingredients
- 200 ml Milk (Lukewarm)
- 100 g Sugar
- 20 g Fresh yeast
- 80 g Butter (Melted)
- 2 Eggs
- 600 g All-purpose flour
- 4 g Salt
- 80 g Butter (Softened, for the filling)
- 150 g Sugar (For the filling)
- 2 cucchiai Cinnamon
- 120 ml Heavy cream
- 200 g Philadelphia cream cheese (For the frosting)
- 20 g Butter (Melted, for the frosting)
- 150 g Powdered sugar (For the frosting)
Steps
- 1
Dissolve the yeast in the lukewarm milk with the sugar and let it activate for about 7 minutes.
- 2
In a bowl, combine the flour, eggs, melted butter, and salt. Add the activated yeast mixture.
- 3
Knead until you have a smooth, slightly sticky dough; do not add too much flour.
- 4
Cover the dough and let it rise for about 2 hours, until doubled in volume. Do not let it rise longer: if it becomes too puffy, it may collapse and become dry.
- 5
Mix the softened butter, sugar, and cinnamon until smooth and evenly combined.
- 6
Roll out the dough and spread it with the cinnamon filling.
- 7
Roll up the filled dough and cut it into spirals.
- 8
Arrange the spirals in a baking pan and let them rise again until nicely puffed. The source does not specify the duration of this second rise.
- 9
Pour the heavy cream over the spirals before baking.
- 10
Bake in a preheated conventional oven at 180°C for 25–30 minutes, until just golden. Avoid overbaking them so they do not dry out.
- 11
Mix the Philadelphia cream cheese, melted butter, and powdered sugar until you have a creamy frosting.
- 12
Spread the frosting over the cinnamon rolls while still warm and serve.
Notes
The recipe does not specify the number of spirals, the size of the baking pan, or the duration of the second rise. The author reports that they remain soft the following day.
