- 2 Pakete Udon noodles (cooked according to the package instructions; one 200 g package is shown in the video)
- 3 Zehen Garlic (chopped)
- 1 White onion (roughly diced)
- 1 Red bell pepper (seeded and roughly diced)
- 2 Stück Spring onions (sliced into rings; set some aside for stir-frying and reserve the rest for garnish)
- 3 EL Sesame oil (for searing and sautéing; according to the recipe, add some oil when cooking the vegetables)
- 2 EL Oyster sauce
- 1 EL Dark soy sauce (provides a dark color; alternatively, according to the video, only one type of soy sauce may be used)
- 1 EL Light soy sauce (alternatively, according to the video, only one type of soy sauce may be used)
- 1 TL Brown sugar
- Sesame seeds (for garnish)
- Wasabi peanuts (for garnish)
- Salt (to taste)
- Pepper (to taste)
Steps
- 1
Roughly dice the onion into larger cubes. Finely chop the garlic.
- 2
Remove the ends and outer layer of the spring onions, then slice them into rings. Set some aside for stir-frying and reserve the rest for garnish.
- 3
Seed the bell pepper and roughly dice it.
- 4
Cook the udon noodles according to the package instructions.
- 5
Thinly slice the steak against the grain into strips. For easier slicing, the meat may be partially frozen; the description recommends 20–30 minutes in the freezer.
- 6
Heat a pan over high heat. Test it by adding a little water: if the droplets dance, the pan is hot enough.
- 7
Briefly heat some sesame oil in the hot pan.
- 8
Sear the beef in batches over high heat for about 1–2 minutes per side. Remove and set aside.
- 9
Add some sesame oil to the pan. Sauté the onion and garlic for 2–3 minutes.
- 10
Add the bell pepper and some of the spring onions, then stir-fry for 2 minutes.
- 11
Add the cooked udon noodles to the pan.
- 12
Add the oyster sauce, dark and light soy sauces, and brown sugar, then stir to combine. Season with salt and pepper to taste.
- 13
Return the seared beef to the pan and heat briefly.
- 14
Plate and garnish with the reserved spring onions, sesame seeds, and wasabi peanuts.
Notes
The stated amount of steak is 300–500 g; udon is listed as two packages, while a 200 g package is shown in the video. Sesame oil is specified for searing and sautéing; the exact distribution of the 3 tbsp is not given. Sesame seeds, wasabi peanuts, salt, and pepper are listed without quantities.
