Ingredients
- 6 Eggs (Separate the egg whites and yolks; the yolks mimic crab roe, while the whites mimic crab meat)
- 1 tsp Potato starch (for the egg whites) (Mix with water until smooth before adding to the egg whites)
- 1 tsp Water (Mix with the potato starch to make a starch slurry for the egg whites)
- 1 tbsp Whole milk (Add to the egg whites to make the finished dish whiter and more tender; stir gently to avoid creating foam)
- Fresh ginger (Mince as finely as possible to provide ginger flavor without noticeable pieces)
- 4 tbsp White rice vinegar (For the seasoning sauce)
- 1 tbsp Sugar (For the seasoning sauce)
- 0.5 tsp Salt (For the seasoning sauce)
- 1 tbsp Potato starch (for the seasoning sauce) (Add to the seasoning sauce to thicken it slightly)
- Cooking oil (Used in two batches: for stir-frying the egg yolks and the egg whites; the original recipe only specifies adding a small amount of cooking oil)
Steps
- 1
Crack the 6 eggs into a bowl. Carefully separate the egg whites from the yolks and place them in two separate containers.
- 2
Mix 1 tsp potato starch with 1 tsp water until smooth, then pour it into the egg whites. Add 1 tbsp whole milk and stir gently to combine the milk, starch slurry, and egg whites; do not create foam.
- 3
Mince the ginger as finely as possible, then place it in the bowl that will be used for the seasoning sauce.
- 4
Make the seasoning sauce: add 4 tbsp white rice vinegar, 1 tbsp sugar, 0.5 tsp salt, and 1 tbsp potato starch to the minced ginger. Stir well and set aside.
- 5
Add a small amount of cooking oil to a wok or skillet, then add the egg yolks and quickly stir-fry until separated. The yolks can be cooked slightly longer; continue stir-frying until set and visibly granular.
- 6
Transfer the stir-fried egg yolks to a plate and set aside.
- 7
Heat a clean wok or skillet and add a small amount of cooking oil. Do not let the oil get too hot; once heated, reduce the heat to the lowest setting.
- 8
Gently stir the egg-white mixture just before pouring it in to prevent the starch from settling. Pour the egg whites into the wok or skillet, then continuously and gently push and stir them with a spatula so they cook evenly.
- 9
Keep the heat low and stir-fry the egg whites until fully set and cooked through while remaining tender and smooth. Do not let the oil get too hot or allow the egg whites to foam; foaming usually indicates that they have been overcooked.
- 10
Once the egg whites are cooked, add the previously stir-fried egg yolks, then pour in the prepared seasoning sauce.
- 11
Increase the heat and quickly stir-fry until the egg whites, egg yolks, and seasoning sauce are thoroughly combined, then immediately remove from the heat.
- 12
Serve hot. The finished dish should be tender, creamy, and savory, and is ideal served with rice.
Notes
The original video does not specify the amount of minced ginger or cooking oil, so add them according to personal taste and the needs of your cookware. When cooking the egg whites, use low heat and continue gently pushing and stirring them to prevent the oil from becoming too hot, which can make the egg whites tough or cause them to foam.
