- 2 tbsp tomato paste
- 1 tbsp chipotle peppers in adobo sauce (Roughly chopped; adjust to taste.)
- 0.5 cup warm water
- 1 tbsp garlic (Minced.)
- 0.333 cup sour cream (Approximately 1/3 cup.)
- 0.333 cup mayonnaise (Approximately 1/3 cup.)
- 0.333 cup buttermilk or water (Approximately 1/3 cup.)
- 1 lime lime juice (Use the juice of 1–2 limes.)
- 1 tbsp taco seasoning (Use less or more, adjusted to taste.)
- 2 tsp chipotle peppers in adobo sauce (Chopped.)
- 1 tbsp dried parsley
- 12 mini flour tortillas (Use 12–15 tortillas.)
- oil (For lightly frying the tortillas.)
- 1 cup shredded mozzarella cheese
- salsa (For serving.)
Steps
- 1
Make the taco seasoning. Add the salt, black pepper, smoked paprika, garlic powder, onion powder, cumin, red chili powder, and oregano to a bowl. Mix thoroughly to combine.
- 2
Heat the clarified butter or oil in a pan over medium heat. Add the diced onion and sauté for about 1 minute, or until fragrant.
- 3
Add the ground beef to the pan and cook over medium heat until it changes color.
- 4
Add the minced garlic and mix it into the beef.
- 5
Season the beef with the taco seasoning, then add the tomato paste and roughly chopped chipotle peppers. Mix and sauté for 2–3 minutes.
- 6
Taste the beef and add additional salt if needed. Pour in the warm water and cook for 8–10 minutes, or until the beef is fully cooked and the water has evaporated.
- 7
Make the chipotle lime crema. Add the mayonnaise, sour cream, buttermilk or water, chopped chipotle peppers, taco seasoning, lime juice, and dried parsley to a bowl. Mix until creamy and smooth.
- 8
Heat oil in a pan over medium heat. Place one mini flour tortilla in the pan.
- 9
Add shredded mozzarella cheese to the tortilla and place beef on one side.
- 10
Close the taco by flipping the empty half of the tortilla over the beef. Cook until the tortilla is crispy and golden.
- 11
Serve the tacos warm with salsa and chipotle lime crema.
