Ingredients
- 1.5 lb Russet potatoes (Peeled)
- 2 tbsp Vegetable oil (Divided into 1 tablespoon portions)
- 0.5 tsp Salt (Plus more to taste for serving)
- Black pepper (To taste)
Steps
- 1
Cut the peeled potatoes lengthwise into 1/2-inch-thick planks. Stack 3 or 4 planks at a time and cut them into 1/2-inch-thick sticks; repeat with the remaining planks.
- 2
Submerge the potato sticks in a large bowl of water and rinse to remove excess starch. Drain and repeat as needed until the water remains clear.
- 3
Cover the rinsed potatoes with hot tap water and let them sit for 10 minutes.
- 4
Drain the potatoes, transfer them to a paper towel-lined rimmed baking sheet, and thoroughly pat them dry.
- 5
Toss the dry potatoes with 1 tablespoon of the vegetable oil in a clean, dry bowl. Transfer the potatoes to the air-fryer basket.
- 6
Place the basket in the air fryer, set the temperature to 350°F, and cook for 8 minutes.
- 7
Transfer the potatoes to the now-empty bowl and gently toss to redistribute them. Return them to the air fryer and cook until softened and changed from white to blond, with possibly spotty brown tips, for 5 to 10 minutes.
- 8
Transfer the potatoes back to the now-empty bowl. Toss them with the remaining 1 tablespoon vegetable oil and 1/2 teaspoon salt.
- 9
Return the potatoes to the air fryer, increase the temperature to 400°F, and cook until golden brown and crisp, 15 to 20 minutes. Every 5 minutes, transfer or toss the fries gently in the bowl to redistribute them.
- 10
Transfer the fries to a large plate and season with additional salt and black pepper to taste. Serve immediately.
Notes
Frequently tossing the potatoes promotes even cooking and browning. Tossing in a bowl rather than directly in the air-fryer basket helps prevent broken fries. Do not clean out the bowl between tosses; residual oil helps the fries crisp.
