Steps
- 1
Heat extra-virgin olive oil in a suitable braising pan. Brown the short ribs on both sides until golden.
- 2
Add the onions to deglaze the pan, scraping up the browned bits as they soften.
- 3
Add the magic oil mixture made with olive oil, olive brine, harissa, saffron, garlic, ginger, turmeric, salt, and pepper. Sweat the onions with the mixture for 5 minutes.
- 4
Return the short ribs to the pan along with their resting juices.
- 5
Add the smen, parsley, and cilantro.
- 6
Cover the meat with water and bring the liquid to a boil.
- 7
Cook until the meat is halfway cooked, then transfer the meat and braising mixture to a tagine.
- 8
Add the preserved lemon, quartered potatoes, fresh cumin, and green olives to the tagine.
- 9
Add parsley, cover the tagine, and finish cooking until the short ribs and potatoes are tender.
