Ingredients
- 170 g honey
- 30 g sugar
- 50 g butter
- 80 g sour cream or plain yogurt (You can use sour cream or plain yogurt.)
- 1 lžička baking soda
- 1 egg
- 150 g plain flour (The author states that she used even less; adjust the amount according to the consistency of the batter.)
- salt (A pinch.)
- 500 g mascarpone
- powdered sugar (Amount not specified; add to taste.)
- Toffifee or another decoration (Optional; the author used sliced Toffifee. Alternatively, sprinkle with crumbled trimmings.)
Steps
- 1
Melt the honey, sugar, and butter in a saucepan over low heat.
- 2
Add the sour cream or plain yogurt, baking soda, and a pinch of salt. Cook, stirring constantly, until the mixture turns amber in color.
- 3
Remove the saucepan from the heat and let the mixture cool slightly.
- 4
Add the egg and whisk it in thoroughly.
- 5
Add the plain flour and mix until a smooth batter forms; adjust the amount if necessary according to the consistency.
- 6
Preheat the oven to 170 °C and line a baking sheet with parchment paper.
- 7
Pour the batter onto the baking sheet and spread it evenly into a rectangle; in the original method, it covered approximately half of the baking sheet.
- 8
Bake for approximately 12–15 minutes. If the batter is spread into a very thin layer, bake for 4–5 minutes.
- 9
Let the baked sponge cool only briefly so that it remains lukewarm; if it cools completely, it may crack when rolled.
- 10
Whip the mascarpone with the powdered sugar. The amount of sugar is not specified; add it to taste.
- 11
Spread the cream evenly over the sponge and carefully roll it up.
- 12
Wrap the roll in aluminum foil and shape it into a neat log.
- 13
Refrigerate it for at least 6 hours.
- 14
Remove the foil and spread the remaining cream over the entire roll.
- 15
According to taste, sprinkle it with crumbled trimmings or decorate it with sliced Toffifee or another decoration.
Notes
The original recipe does not specify the amount of powdered sugar or the exact amount of any decoration. The baking time depends on the thickness of the batter layer.
