Ingredients

  • 200 g quinoa (Rinsed)
  • 500 g water
  • 150 g zucchini (Cut into sticks)
  • 100 g carrot (Cut into sticks)
  • 100 g broccoli florets
  • 1 ripe avocado (Sliced)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • salt and pepper (To taste; use a pinch of salt with the quinoa)
  • sesame seeds (To garnish)

Steps

  1. 1

Put the rinsed quinoa and the water with a pinch of salt in the Thermomix mixing bowl.

  2. 2

Place the zucchini sticks, carrot sticks, and broccoli florets in the Varoma dish.

  3. 3

Set the Varoma in position and program the Thermomix for 18 minutes at Varoma temperature and spoon speed.

  4. 4

Carefully remove the Varoma and set the steamed vegetables aside.

  5. 5

Check that the quinoa is tender and that the water has been absorbed. If liquid remains, drain the quinoa using the basket.

  6. 6

Divide the quinoa between two bowls and spread the steamed vegetables on top.

  7. 7

Add the avocado slices and dress the bowls with the olive oil, lemon juice, salt, and pepper.

  8. 8

Sprinkle with sesame seeds and serve warm.

Notes

Rinse the quinoa well before cooking to remove bitterness from the saponins. Cooked chickpeas can be added to increase the protein content.
