Ingredients
- 2 cup All-purpose flour
- 1.5 tsp Baking powder
- 0.25 tsp Baking soda
- 0.5 tsp Salt
- 1.333333 cup Organic light brown sugar (Packed)
- 0.5 cup Coconut oil (Melted and cooled)
- 6 tbsp Water (Room temperature)
- 0.333333 cup Unsalted creamy almond butter (Processed almond butter is recommended for the best texture; natural almond butter may make the cookies too greasy and cause excessive spreading)
- 2 tsp Vanilla extract
- 1.25 cup Semisweet chocolate chips or chunks (Check the ingredient list carefully because not all semisweet chocolate chips are vegan)
Steps
- 1
Whisk the flour, baking powder, baking soda, and salt together in a bowl.
- 2
In a large bowl, whisk the brown sugar, melted and cooled coconut oil, room-temperature water, almond butter, and vanilla extract until the mixture is well combined and smooth.
- 3
Using a rubber spatula, stir the flour mixture into the oil mixture just until combined. Fold in the chocolate chips or chunks.
- 4
Cover the bowl with plastic wrap and let the dough rest at room temperature for at least 1 hour and up to 4 hours. Alternatively, refrigerate the dough for up to 24 hours, then let it sit at room temperature for 30 minutes before portioning.
- 5
Adjust the oven rack to the middle position and heat the oven to 350°F.
- 6
Line two rimmed baking sheets with parchment paper.
- 7
Divide the dough into 16 portions, each about 3 tablespoons, and arrange the dough mounds 2 inches apart on the prepared baking sheets.
- 8
Bake one sheet at a time for 12 to 14 minutes, rotating the sheet halfway through baking. The cookies are ready when they are light golden, the edges have begun to set, and the centers are still soft.
- 9
Let the cookies cool completely on the baking sheet, then serve.
Notes
Cookies can be stored at room temperature for up to 3 days. Not all semisweet chocolate chips are vegan; check labels carefully. The source recommends processed almond butter rather than natural almond butter for the best texture.
