Weights are estimates. Together, the ingredients weigh about 1.5 kg before cooking, which is about 375 g per serving.

Steps

  1. Prepare the pickled red onions according to the recipe on the blog. If making them ahead, chill them until needed.

  2. Prepare the Easy Grilled Chicken recipe. Grill the chicken until cooked through, then let it rest before slicing. Grill the corn for a few minutes on each side, until lightly charred and tender, then shave the kernels from the cobs.

  3. While the chicken rests, place half of the crumbled feta, shaved grilled corn, cubed avocado, chopped cilantro, lime juice, olive oil, and one hefty pinch of flaky salt in a large bowl.

  4. Gently toss the salad ingredients together until combined, taking care not to crush the avocado.

  5. Slice the rested grilled chicken and arrange it on a serving platter or plates.

  6. Spoon the avocado-corn salad over the grilled chicken.

  7. Top with the pickled red onions and the remaining feta. Drizzle with hot honey and additional olive oil, then finish with the remaining pinch of flaky salt.

  8. Serve immediately while the chicken is still warm and juicy.

Notes

Leftovers can be stored in an airtight container for up to 2 days; the avocado may soften slightly. Frozen fire-roasted corn can be substituted for fresh grilled corn. Serve with tortilla chips, warm pita, cilantro-lime rice, or black beans. The pickled onions, grilled chicken, and corn can be prepared ahead and assembled just before serving.
