Ingredients
- 4 tbsp Barilla Rustic Basil Pesto (Divided between the ramekins and for drizzling on top)
- 2 tbsp Butter (Divided between two ramekins for greasing)
- 0.333 cup Cherry tomatoes (Sliced)
- Cooking oil (For sautéing the cherry tomatoes; amount not specified)
- 0.333 cup Mozzarella cheese (Grated)
- 4 Eggs (Crack two eggs into each ramekin, taking care not to break the yolks)
- 4 tbsp Heavy whipping cream (Drizzled over the eggs)
- 1 tsp Red chili flakes (For seasoning and garnish)
- Salt (To taste; used with the tomatoes and as a finishing seasoning)
- Black pepper (To taste; used with the tomatoes and as a finishing seasoning)
- Fresh basil leaves (A bundle, for garnish)
Steps
- 1
Preheat the oven to 425°F (220°C).
- 2
Divide the butter between two individual ramekins. Rub the butter over the bottoms and sides of the ramekins.
- 3
Heat a pan with cooking oil. Add the sliced cherry tomatoes and sauté for 2–3 minutes. Season with salt and pepper while they cook.
- 4
Divide the sautéed tomatoes between the two ramekins.
- 5
Add 2 tablespoons of Rustic Basil Pesto to each ramekin.
- 6
Divide the grated mozzarella between the ramekins.
- 7
Crack two eggs into each ramekin, taking care not to break the yolks.
- 8
Drizzle the heavy cream over the eggs, then add more Rustic Basil Pesto sauce on top.
- 9
Season each ramekin with salt, pepper, and red chili flakes.
- 10
Bake for 20–25 minutes, checking the eggs beginning at 15 minutes. For runny yolks, the yolks should jiggle substantially while the whites are cooked; for firmer yolks, continue baking until the yolks no longer jiggle.
- 11
Let the baked eggs cool for a few minutes. Finish with salt, pepper, red chili flakes, and fresh basil leaves.
- 12
Serve with bread and a side of breakfast potatoes or potato wedges.
Notes
The source does not specify the amount of cooking oil for sautéing the tomatoes. Serve with your choice of bread and breakfast potatoes or potato wedges.
