Ingredients
- 6 oz marinated artichoke hearts (From a 6 oz jar; drained and minced)
- 5 oz baby spinach (5 oz package; washed, dried, and roughly chopped)
- 1 flatbread or naan
- 1 clove garlic (Peeled and minced)
- 0.667 cup plain Greek yogurt
- 1 shallot (Peeled and minced)
- 0.125 tsp crushed red pepper
- 2 tsp extra virgin olive oil
- 0.125 tsp salt (Used during cooking and whisked with the yogurt)
Steps
- 1
Preheat the oven to broil on high and position the rack in the upper third of the oven. Skip this step if using a toaster for the naan.
- 2
Wash and dry the spinach, unless it was purchased pre-washed. Roughly chop it and place it in a small bowl; set the bowl aside.
- 3
Peel and mince the garlic and shallot.
- 4
Preheat a skillet over medium heat.
- 5
While the skillet heats, drain and mince the artichoke hearts.
- 6
When the skillet is hot, add the olive oil and swirl to coat the bottom. Add the garlic, shallot, and salt. Cook, stirring often, until softened, 2–3 minutes.
- 7
Add the spinach to the skillet in handfuls, waiting for each handful to wilt slightly before adding the next. Continue cooking and stirring until the spinach is completely wilted, 1–2 minutes more. Reserve the bowl for later use.
- 8
Remove the skillet from the heat. Stir in the minced artichokes, then set the mixture aside to cool slightly for about 5 minutes.
- 9
Place the Greek yogurt, salt, and crushed red pepper in the reserved bowl. Whisk until smooth.
- 10
Add the cooled spinach-artichoke mixture to the yogurt. Stir to combine the dip, then set it aside.
- 11
Arrange the naan on a baking sheet. Place it in the oven and broil, flipping halfway through, until toasted, about 2 minutes. Alternatively, toast it in a toaster. Remove from the heat and cut into wedges.
- 12
Divide the toasted naan and dip between plates and serve.
Notes
The structured ingredient list specifies 3 pinches of salt; the method uses salt both while cooking the aromatics and in the yogurt. The recipe does not specify an exact broiler distance or naan weight.
